Zucchini Cake

Ingredients

• 1/2 c. oil
• 1/2 c. margarine, melted
• 1 3/4 c. sugar
• 2 eggs
• 2 1/2 c. flour
• 2 tsp. cinnamon
• 1 tsp. salt
• 1 tsp. baking soda
• 1 tsp. baking powder
• 3 rounded TBSP cocoa
• 1/2 c. milk
• 1 tsp. vanilla
• 2 c. grated zucchini
• 3/4 c. chocolate chips
• 3/4 c. brown sugar
• 3/4 c. nuts

Preparation

Step 1

With beaters mix the oil, margarine, sugar, and eggs. Add the next nine ingredients (flour through zucchini) and mix. Pour into cake pan. Sprinkle the top of the batter with chips, brown sugar, and nuts. Bake at 350º for 40 minutes.
