Zucchini Loaf

Ingredients

  • 3 eggs
  • 1 C oil
  • 2 t vanilla
  • 2 C white sugar
  • 2 C raw grated zucchini
  • 2 C flour
  • 1 t baking soda
  • 1 t cinnamon
  • 1 t salt
  • 1/2 t ginger
  • 1/2 t nutmeg
  • 1/4 t baking powder
  • 1/2 C rolled oats
  • 1 (3.4 oz) package butterscotch pudding mix
  • 1 C nuts
  • Lemon Frosting
  • 2 C icing sugar
  • 1/2 t lemon zest
  • 2 T lemon juice
  • 1/4 C butter

Preparation

Step 1

Preheat oven to 350

Mix bread ingredients and spread into 2 greased, floured, wax paper lined pans. Bake 1 hour.

Mix frosting and spread over loaves when cool.
