Chilled Avocado Soup

Ingredients
- 1 small onion, peeled and minced
- 2 tablespoons unsalted butter
- 4 cups chicken broth
- 4 medlum-to-large ripe avocados
- 3 tablespoons freshly squeezed lime Juice
- Salt and whole white pepper In a pepper mill
- Ground cayenne pepper or hot sauce
- 2 cups heavy cream Chopped green onions or fresh chives and red chile peppers,
- for garnlsh

Preparation
Step 1
1. Saute onion in butter in soup pot over medium heat until softened but not colored. Add broth, bring to simmer, and simmer until onion is tender, about 10 minutes. Turn off heat.
2. Peel, pit and slice 3 avocados. Put in blender or food processor with onion and broth and 2 tablespoons lime juice. Puree. Taste and season with salt, white pepper and cayenne or hot sauce. Stir and chill thoroughly, at least 2 hours.
3. Just before serving, peel and dice remaining avocado. Toss with remaining lime juice. Stir cream into soup, taste and adjust seasonings.
