Beef: Corned Boiled Beef Brisket

Ingredients

  • Brisket
  • Flour
  • Pork grease
  • Turnips
  • 1 onion, chopped fine
  • 1 carrot
  • 3 cups boiling water
  • 2 slices pork
  • Salt and pepper

Preparation

Step 1

Brown 2 thin slices of fat pork in frying pan and remove. Wipe a 4 ob piece of brisket with a damp cloth, dredge with flour and brown in pork grease. Place in kettle with turnip, onion, carrot, salt and pepper. Cover and boil slowly for 3 hours. By using hot water, it will retain the juices. Don't pierce with a fork. When done and throughly tender, cut meat in large pieces and serve without vegetable seasonings. Serve with horseradish.
