Beef: Corned Beef Hash

Ingredients

  • 2 cups finely chopped, cooked, light corned beef
  • 1 can 15 oz potatoes, drained and chopped
  • 1 small onion, diced
  • 1 T chopped fresh parsley
  • 1/4 t ground black pepper

Preparation

Step 1

Mix all ingredients in a large bowl.
Coat a large nonstick skillet with non-stick spray and place over medium heat until hot. Spread mixture evenly in pan, pressing firm with a metal spatula, Cook, stirring or turning frequently, for 10 to 15 minutes or until browned.

If you run out of corned beef, substitute deli roast beef or chicken.
