Mexican: Spinach Enchilada Casserole

Ingredients

  • 1 1/2 lbs lean ground beef
  • 1 clove garlic
  • 1/2 cup chopped onion
  • Salt and freshly ground black pepper
  • 2 tomatoes, chopped
  • 8 ozs tomato sauce
  • 2 4 oz cans diced green chilies
  • Juice of 1/2 lime
  • 1 T sugar
  • 1 10 oz pkg frozen chopped spinach, thawed and squeezed dry
  • 10 6" corn tortillas
  • 1/2 cup butter, melted
  • 3 cups shredded Monterey Jack cheese
  • 1 cup sour cream

Preparation

Step 1

Cook ground beef, garlic, onion, salt and pepper. Add tomatoes, sauce, green chilies, li,e juice, sugar and spinach. Mix well, Cover and simmer for 10 minutes. Cut tortillas into quarters, overlapping slightly. Spoon half of beef mixture over tortillas. Sprinkle half cheese. Arrange rest of tortilla quarters over cheese, overlapping slightly. Spread with sour cream. Spoon remaining beef mixture over sour cream. Sprinkle with cheese. Bake at 350 degrees for 30 minutes.
