Ingredients
- 6 or more small to medium russet baking potatoes
- olive oil
- canola oil
- kosher salt
- fresh ground black pepper
- 6 or more strips of bacon
- 4 or more ounces grated cheddar cheese
- sour cream
- 2 green onions

Preparation
Step 1
-scrub potatoes clean
-rub w/olive oil and bake at 400degrees for 1 hr
-while potyatoes are cooking, fry bacon
-remove potatoes and let cool enough to handle
-cut in half horizontally, use spoon to scoop leaving 1/4 in
-turn oven up to 450degrees
-rub skin and inside with canola oil, sprinkle with salt
-place on baking rack in broiler pan
-cook for 10 on one side then 10 on other
-remove and let cool to handle
-arrange skin side down,sprinkle pepper,cheese, & bacon
-broil 2 min or until cheese is bubbly
-remove and use tongs to place on serving plate
-add onion and sour cream
-serve
