Tarragon Salmon

Ingredients

  • All to taste:
  • 2 salmon fillets
  • tarragon
  • lemon
  • vermouth
  • shallots
  • heavy cream

Preparation

Step 1

Sear salmon skin-side down. Remove fish and add 1 inch of vermouth to pan.

Add heavy cream and shallots. Bring to a boil and reduce. Add rest of ingredients and return fish to pan until warm.
