Ingredients
- All to taste:
- 2 salmon fillets
- tarragon
- lemon
- vermouth
- shallots
- heavy cream
Preparation
Step 1
Sear salmon skin-side down. Remove fish and add 1 inch of vermouth to pan.
Add heavy cream and shallots. Bring to a boil and reduce. Add rest of ingredients and return fish to pan until warm.
