Ingredients
- 1 3 pound boneless pork shoulder roast
- 3/4 cup reduced sodium chicken broth
- 1 medium onion
- 1 cup cilantro leaves 1 bunch
- 2 tablespoons vinegar
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano, crushed
- 1/4 teaspoon ground black pepper
- 2 red onions thinly sliced
- 1 tablespoon cooking oil
- 1/4 cup lime juice
- ciabatta or French rolls

Step 1
1. Trim fat from roast; In slow cooker stir together broth, onion wedges, cilatro, 1/4 cup water, vinegar, garlie, salt, cumin, oregano, and pepper. Add meat to cooker. Spoon misture over meat. Cover and cook low heat 10 to 12 hours or high 5 or 6 hours.
2. Just before serving cook red onion in hot oil over medium high heat until tender but not browned. Carefully add lime juice. Cook and stir unitl lime juice is evaporated.
3. Transfer meat to cutting board; cool meat slightly. Shred meat. discard fat. Serve meant and red onions on rolls.
