Ingredients

  • 2 1/2

    cups mixed squash ( 1 1/4 cup

  • of yellow and 1 1/4 cup of zuchinni)

  • 1

    cup of chopped onion

  • 1

    cup of milk

  • 1

    cup of shredded cheddar cheese

  • 2

    eggs, slightly beaten

  • 6

    tablespoons butter, melted

  • 1

    teaspoon salt

  • 1

    teaspoon pepper

  • 2

    cups of Ritz Crackers, crushed (or

  • you can use 2 cups of crushed saltine

  • crackers)

Directions

Cook squash until tender. Add all other ingredients. Add milk and egg last. Save some of the cheese for the topping along with crushed crackers. Bake at 350 degrees for 1 hour. Makes 1 quart casserole ad serves 4. Double recipe for more servings.
