Fish or Seafood - Santa Fe Salmon

Ingredients

  • 1 10 oz can of diced Rotel tomatoes with lim juice and cilantro, drained well
  • 1/2 cup mayonnaise
  • salt and pepper salmon to taste
  • 1 1/2 lbs salmon filets (4 boneless, skinless fillets)

Preparation

Step 1

Drain 1 (10 oz) can of diced Rotel tomatoes with lime juice and cilantro (drain well)
½ cup mayonnaise
salt and pepper salmon to taste
1 ½ lbs salmon filets (4 boneless, skinless fillets)

Drain 1 can of tomatoes with lime juice and cilantro well. Add ½ cup mayonnaise and mix together with spoon until it becomes pastelike. Lightly salt salmon and a little pepper (if desired). Coat filets with tomato mixture.

Spray frying pan with Pam. Heat pan till medium hot and add salmon filets that have been covered on both sides with tomato mixture. Add remaining mixture to frying pan. Cook on medium heat 6-8 minutes, turning half-waya through cooking time. When salmon begins to flake it is done.

Serve with rice, tossed salad and French Bread. It is delicious.
