Fish Tagine with Tomatoes & Capers

Ingredients
- 1-1/2 tbs Moroccan Rose Seasoning
- 1/4 cup EVOO
- 1 15-oz. can stewed tomatoes, chopped
- 1-1/2 tbs capers, drained
- 4 6-oz. pieces cod or halibut fillet, about 1" thick
- S&P

Preparation
Step 1
Heat Moroccan Rose Seasoning in oil in tagine over medium heat, stirring occasionally for about 1 minute.
Stir in tomatoes and capers and simmer, stirring occasionally until thickened, about 10 minutes.
Pat fish dry and sprinkle with S&P then add to tagine. Cover & simmer until fish is cooked thru about 10 minutes. Serve over couscous
