Old-Fashioned Chocolate Cake Pops

Prepare instant coffee according to package directions and substitute it for the hot brewed coffee

Ingredients

  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup hot strong brewed coffee
  • 1 cup all purpose flour
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg at room temp
  • 1 large egg yolk at room temp
  • 1/3 cup buttermilk
  • 1 tsp vanilla extract
  • nonstick baking spray

Preparation

Step 1

1. In a small bowl, whisk together cocoa and coffee. Set aside.

2. In another small bowl, whisk together flour, baking soda, baking powder and salt. set aside.

3. In a medium bowl, using an electric mixer on medium speed, beat butter until cream, about 45 seconds. Add sugar and beat for 2 minutes. Add egg, then egg yolk, beating well after each addition.

4. Whisk buttermilk and vanilla into coca mixture.

5. Add flour mixture to butter mixture alternately with cocoa mixture, making three additions of flour and two of cocoa and beating on low speed until combined.

6. Spray cake pop wells with nonstick baking spray. Fill each well with about 1 tblsp batter. Bake for 4 to 6 minutes or until a tester inserted in the center comes out clean. transfer cake pops to a wire rack to cool. Repeat with the remaining batter.
