Romano Bean Salad

Ingredients

  • 1 lb. romano or green beans, cut in 1/2" pieces
  • 1 T kosher salt
  • 1 garlic clove
  • 1/4 chopped parsley
  • 2 T capers
  • 1 T olive oil
  • 1 t grated lemon rind
  • Salt & pepper

Preparation

Step 1

Cook beans with 1 T kosher salt & garlic. Plunge in ice water; drain.
Place beans in med. bowl. Finely chop garlic; add to beans. Add parsley & remaining ingredients, tossing gently.
