Basic Risotto

Ingredients

  • 5 cups chicken or vegtable stock
  • 4 T. butter
  • 1 onion
  • 1 cup Arborio, Carnaroli, or Vialone (good for creamy rsottos.
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese

Preparation

Step 1

Heat stock

Heat butter, add onion, season.

Add rice, and stir for 2 min. Add wine, cook until absorbed.

Add stock 1 cup at a time until absorbed.

Remove from heat and stir in more butter, cheese, and season.
