Chipotle Flank Steak

Ingredients

  • 2 pounds flank steak
  • 2 dried anaheim or similar chiles
  • 2 tablespoons dry oregano
  • 3 chipotle peppers -- stemmed, seeded
  • 8 garlic cloves -- minced
  • 1 tablespoon tequila
  • 1 tablespoon olive oil
  • 2 teaspoons salt

Preparation

Step 1

Grind peppers and oregano into a powder. Combine with remaining ingredients, except steak and mix into a paste.

Spread paste evenly over flank steak and refrigerate for about 1 hour.

Preheat grill.

Grill steak for 8 to 10 minutes per side, or until done.

This recipe yields 4 servings.
