lemon poppyseed muffins

Ingredients

  • 1 1/2 cup sugar
  • 3/4 cup butter
  • 3 cups flour
  • 1/4 cup poppy seeds
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 1/2 tablespoon grated lemon rind
  • 3 eggs
  • 1 1/4 cup sour cream
  • 1 1/2 teaspoon vanilla
  • granulated sugar

Preparation

Step 1

Sift together dry ingredients.
Beat butter and sugar for two minutes.
Beat in eggs one at a time.
Stir in vanilla and sour cream.
Stir in dry ingredients.
Scoop into muffin tin.
Sprinkle granulated sugar over top.
Bake at 375° for 25 minutes.
