Coquilles St. Jacques

Ingredients

  • Topping:
  • 1/4 cup dry white wine
  • 1/2 tsp. dill
  • 1 pound scallops
  • 1/8 cup butter
  • 1/8 cup green onions
  • 1/8 cup flour
  • 1/2 cup milk
  • 4 mushrooms, chopped
  • salt and pepper to taste
  • bread crumbs
  • melted butter
  • parmesan cheese

Preparation

Step 1

Combine 1 1/2 cups water with wine and dill. Bring to boil and cook scallops about 6 minutes. Drain and reserve stock. Meanwhile, cook onions in butter; add flour and cook 1 minute. Gradually stir in milk and 1/2 cup reserved stock from scallops. Cook slowly until sauce thickens. Add scallops, mushrooms, salt and pepper.

Place in scallop shells. Mix together topping ingredients and divide over top of scallops.

Heat in 400 degree oven til bubbly and top browns.
