Ingredients

  • 2/3 cup unsalted butter, room temp.
  • 1/3 cup sugar
  • 2 large egg yolks
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1 1/2 cups flour
  • 2 large egg whites
  • 3/4 cup finely chopped nuts
  • 1/3 cup jam

Preparation

Step 1

Oven 350.
Line baking sheets with parchment papoer or non stick baking mat.
In a large bowl, beat together butter and sugar until light and fluffy.
Beat in egg yolks, vanilla and salt.
Gradually stir in flour.
Form dough into 1" balls.
Dip in lightly beaten egg whites, then roll in nuts.
Place 1" apart on cookie sheets.
Press center of each with thumb.
Bake 16-18 min, or until golden brown.
Cool on baking sheet for 5 min., then remove to a wire rack to cool completely.
Just before serving, fill centers with jam
Or fill centers before baking.
