Ingredients

  • 2 1/4 lbs dry great Northern Beans
  • 10 quarts of water
  • 1 teaspoon salt
  • 1 ham bone
  • 4 large chopped carrots
  • 4 stalks celery, chopped
  • 1/2 chopped onion
  • 3/4 teaspoon garlic powder
  • 2 teaspoon mustard powder
  • 4 bay leaves
  • 3 to 4 lbs chopped ham
  • 2 teaspoon ground white pepper
  • 1 1/2 teaspoon paprika

Fast soak for beans Rinse well. In large pot add hot water and beans. Bring to a rolling boil for 5 minutes. Turn heat off and let beans sit for one Hour in water. Drain water.

After the 60 minutes of soaking remove 1/3 of the beans and mash with potato masher or food processor. return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard, bay leaves, chooped ham, ground white pepper, and paprika in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes or till beans are soft.

Remove ham bone and discard.
