Paisan's Zucchini Pizza

Ingredients

  • 3 Large zucchini
  • Low fat part-skim mozzarella cheese
  • Pizza sauce low sodium
  • Garlic/parmesan blend (365 Organic)
  • Turkey pepperoni
  • Bell peppers
  • Red onion
  • Mushrooms
  • any other topping you want

Preparation

Step 1

Place zucchini in strainer; sprinkle with salt. Let stand for 10 minutes. Squeeze out moisture.

Pre heat oven to 350

Cut Zucchini into thin slices

Lay slices on non-stick baking sheet

Top each slice with one tsp pizza sauce

Sprinkle parmesan blend over each zucchini slice

Add your toppings to each slice

Cover your toppings with 1 tbsp of cheese-more to taste

Bake, uncovered, at 350° for 20-25 minutes.
