Smokey Chipotle Pork Loin

Ingredients
- 1 1/2 tsp. garlic salt
- 1 tsp. ground chipotle chile pepper
- 1/2 tsp ground cumin
- 1/2 tsp. ground coriander
- 1 3 1/2 lb. pork loin roast

Step 1
Combine dry ingredients; rub over pork. Cover and refrigerate for 2-8 hours. Let stand at room temperature for 30 minutes before cooking.
Preheat oven to 375. Line a rimmed baking sheet with aluminum foil and place an ovenproof wire rack on top. Place pork on rack; bake for 1 hour or until a meat thermometer inserted into thickest portion registers 145 or desired degree of doneness.
Carefully transfer pork to a serving platter or carving board. Let stand 10 minutes before carving.
