Ingredients

    med. beets peeled

  • 2

    tblsp minced onions

  • 2 1/2

    c. water

  • 1/2

    c. dry white wine

  • 2

    c. cream or milk

  • 3

    tblsp sugar

  • 3

    eggs

  • 3

    med lemons' juice

  • 1/2

    tsp salt

  • 1/2

    tsp celery salt

  • Sour Cream

  • 1

    cucumber, seeded & diced - garnish

Directions

Cut beets into halves. Placethem in a soup pot with enough water to cover - boil Cook 30-40 min. - skim foam Rinse, pare and slice fresh beets - force thru fine blade of a grater. In a heavy 3 qt. saucepan, combine cooking liquid, beets & onions wine, lemon juice, sugar & salts & wine - bring to a boil Reduce heat, partially cover & cook slowly - 15 min. Beat eggs & milk together - gradually pour into mixture stirring constantly Cook for 2 min. Remove & chill thoroughly in refrigerator Pour into chilled soup bowls Garnish each serving with sour cream & cucumber
