Sweet & Sour Meatballs

Ingredients

  • 1 lb ground turkey breast
  • 2 green onions, chopped (green only)
  • 1 1/2 Tbs. fresh ginger, grated
  • 1/2 tsp. black pepper
  • 2 egg whites
  • 8 oz. can pineapple chunks in natural juices (no sugar added)
  • 1/4 cup Splenda
  • 1 1/2 Tbs. cornstarch (optional)
  • 1/4 cup white wine vinegar
  • 1 green bell pepper, cut in very thin strips

Preparation

Step 1

1. In a large mixing bowl, mix turkey, green onions, ginger, pepper and egg whites together thoroughly.
2. Shape mixture into 1" balls and place on cookie sheet that's been lightly sprayed with non-fat cooking spray (or you can line the pan with aluminum foil and not use cooking spray as the meatballs should stick only slightly). Bake at 350 degree for 15 minutes, or until lightly browned.
3. Strain pineapple, saving liquid in a measuring cup. Add water to juice to make 1 cup of liquid.
4. In a non-stick skillet, combine juice, brown sugar substitute, cornstarch, vinegar and green pepers over medium heat. Stir constatnly, until sacue begins to thicken, about 4 mintues.
5. Mix in meatballs and pineapple evenly. Cover and simmer 10 minutes.
