Beans with Sausage and Tomatoes

Ingredients

  • 1 lb. Dried kidney or Taylor beans (about 3 cups)
  • 4 oz. Duck fat
  • 4 large spicy sausages
  • 1/4 lb. Cooked bacon
  • 1 large onion, sliced
  • Bouquet garni
  • 4 cloves garlic
  • 1 tsp. Sea salt
  • Freshly ground pepper
  • 2 large carrots, sliced 1/4 in thick
  • 2 large tomatoes, peeled, seeded and quartered or 1 (14 oz. Can)
  • 1 tbsp. Chopped parsley

Step 1

Soak the beans for 8 hrs, drain, and cook in boiling water for 30 mins. Then drain

In a heavy saucepan, melt the fat and fry the sausages until browned. Remove and reduce the heat to medium and add the onion. Cook until golden (5mins.), add the bacon, beans, garni, garlic and salt & pepper. Add water to cover and cook uncovered for 1 ½ hrs.

Add carrots and tomatoes and cook 30 mins. Then set the sausages on top, and cook until the water is just under the beans and thick. (30 mins. to 1 hr.) Serve
