SLOW ROASTED GARLIC & LEMON CHICKEN

Ingredients

  • 6-8 chicken leg quarters
  • 1 bulb of garlic, separated & peeled
  • 2 lemons, cut into chunky eighths
  • 1 handful fresh thyme
  • 3 tablespoons olive oil
  • 6 T white wine
  • Black pepper

Preparation

Step 1

Preheat the oven to 325º

Put the chicken pieces into a roasting pan & add the garlic, lemon, and thyme; just roughly pull the leaves off the stalks. Add the oil and using your hands mix everything together, then spread the mixture out, making sure all the chicken pieces are skin side up.

Sprinkle the white wine & black pepper over the chicken, then cover tightly with foil & put in the oven to cook, at flavour-intensifyingly low heat, for 2 hours.

Remove the foil & turn the oven up to 400º. Cook uncovered for 30-45 minutes until the skin is golden brown & crispy, the lemons will have begun to scorch & caramelize at the edges.

Garnish with the remaining thyme sprigs & serve. ENJOY!
