Ingredients
- 1 pound fresh cranberries
- 1/2 cup sweet onion, diced
- 1 cup water
- 1 teaspoon ground allspice
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon freshly ground pepper
- 1 bay leaf
- 1/2 tablespoon salt
- 1/2 cup white vinegar
- 1 i cup light brown sugar

Preparation
Step 1
In a large pot, place cranberries, onion and water. Cover and simmer for 30 minutes, stirring periodically. Puree mixture in a food processor for 10 to 20 seconds. Place in large pot over low heat and reduce by half.
Wrap all spices and bay leaf in a cheesecloth and tie. Add to pot with salt, simmering for 25 minutes.
Remove spice bag, add vinegar and light brown sugar and simmer another 15 minutes until thick, stirring frequently to avoid scorching. Remove from heat, chill and serve.
