Ingredients

  • 4 slices wheat bread
  • cooking spray
  • 2 Tbsp. grated parmesan cheese
  • 1/4 tsp. sea salt
  • 3/4 tsp. ground black pepper
  • 3/4 tsp. garlic powder
  • 3/4 tsp. paprika
  • 1 c. plain 2% greek yogart
  • 2 large white egg whites, beaten
  • 1 Tbsp. Dijon mustard
  • 2 boneless chicken breast halves
  • 2 boneless thighs
  • 2 drumsticks
  • lemon wedges

Step 1

Preheat oven to 400. Use food processor to make bread crumbs. Spread in single layer in shallow baking pan lined with parchment paper. Bake till 1 shade darker (5 minutes). Pour crumbs in shallow bowl to cool. Reline pan with wax paper and spray pam. Once crumbs cool add parmesan, salt, pepper, paprika, and garlic powder.

Combine yogart, egg whites, and mustard.

Pat chicken dry. Dip into yogart mixture and coat, drip off excess. Coat in breadcrumb mixture. Arrange on pan, coat tops of chicken with pam. Bake 35-40 minutes. Put lemon wedges on serving tray to use as needed.
