Impossibly Easy Cheesy Vegetable Pie

Ingredients

  • 2 1/2 cups frozen broccoli, carrots, and cauliflower (from 1-pound bag), thawed, drained, and large pieces cut in half (or your favorite veggie mix)
  • 1/3 cup chopped onion
  • (1/3 cup chopped red or yellow bell pepper -optional)
  • 1 1/2 cup shredded Cheddar cheese
  • 1/2 cup Bisquick mix
  • 1 cup milk
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • (optional- add Chef's Blend seasoning mix)

Preparation

Step 1

Heat oven to 400*F. Spray 9-inch glass pie plate with cooking spray.

Stir together vegetables, 1 cup of the cheese, and the onion (& bell pepper) in the pie plate.
Stir remaining ingredients with wire whisk or fork until blended. Pour into pie plate.

Bake about 35 minutes or until golden brown and knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Bake 1-2 minutes longer or just until cheese is melted.
Let stand 5 minutes before serving.
