Mango Tequila Relish

A wonderfully flavorful relish for fish (sea bass, marlin, tilapia, etc).

Ingredients
- Olive oil, as needed
- Fresh garlic, minced
- 1/4 cup onion
- Scallions, diced
- 1-2 jalapenos, seeded and minced
- 2 mangos, peeled, seeded and diced
- 1/4 cup roasted red pepper, diced
- 1/4-1/2 cup tequila
- 2 limes, fresh squeezed
- Fresh cilantro, chopped

Step 1
Saute onions and scallions in small amount of olive oil until translucent and sweet. Add in the minced jalapenos and diced mango. Saute a couple of minutes to bring out the natural sugars. Toss in the roasted red peppers and remove from heat.
Add in tequila and slowly bring back to heat and flame the dish. Add in the fresh lime juice and cilantro.
Serve over fish.
