Ingredients
- Pour over soup in bowl when done:
- 5 cups chicken broth
- 1 bay leaf
- 1 spring thyme
- 3 Tbs olive oil
- 1 1/2 lbs onions chopped
- 3/4 lb red potatoes cut 1/2 inch chunks
- salt
- pepper
- balsamic vinegar to taste
- 1 tsp olive oil
- 1 tsp balsamic vinegar
Preparation
Step 1
cook chicken broth, bay leaf, thyme for 15 mins. cook onions in olive oil, boil potatoes until tender. puree mixture and return to pan until hot. add salt and pepper.
serve in a bowl and top with oil and vinegar mixture.
