Shrimp Scampi

Ingredients

  • 1/4 c. extra virgin olive oil
  • 2 t. anchovy paste
  • 2 lbs shrimp
  • 2-3 garlic cloves (minced)
  • pinch crushed red pepper flakes
  • salt & pepper to taste
  • 1/2 c white wine
  • 1 c. clam juice or chick stock or 1/2 c. each
  • 1 lemon, juiced
  • 2 T. cold butter
  • 1/4 c. fresh chopped flat leaf parsley

Preparation

Step 1

Heat olive oil in heavy skillet med to med high heat. Add anchovy paste & stir til melted. Add shrimp and cook 2 minutes or so.
Add garlic, pepper flakes salt and pepper, cook another few minutes. Add wine and reduce a minute , add stock and heat through.
Then add lemon juice, butter and parsley stir and cook a few more minutes. It's the best. Let me know how you like it.
