Grandma Arlene’s Oatmeal Cake

Ingredients

  • Caramel Coconut Frosting:
  • 1 cup oatmeal
  • 2 cups boiling water
  • 1/2 cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 1/2 cup raisins (boil in just enough water to cover 5 minutes-drain)
  • 1 teaspoon soda
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 1/2 cups flour
  • 1 teaspoon vanilla
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/2 cup thin cream(1/2 & 1/2)
  • 1 cup coconut
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts

Preparation

Step 1

Cake:
1. Preheat oven to 350 degrees
2. Pour water over oatmeal and butter; let stand 20
minutes
3. In a large bowl,combine sugars, raisins, soda, eggs,
cinnamon and salt; mix well
4. Add oatmeal mix, flour and vanilla; mix well
5. Pour into greased 9x13 pan
6. Bake for 30-35 minutes or until tests done
7. While cake is still warm frost

Frosting:
1. In a medium pan combine butter, sugar and cream
2. Bring to a boil; reduce heat and simmer for 10
minutes
3. Remove from heat; cool
4. Stir in coconut, vanilla and nuts
