Poultry: Dove Breasts

Ingredients

  • 1 T butter
  • 1 T chopped onions
  • 1 T chopped parsley
  • 1 T flour
  • 1 cup sherry
  • 1 cup mushrooms
  • 1/2 t salt
  • 1/2 t pepper
  • 1 dash of Tabasco

Preparation

Step 1

Soak in salt water before processing.
Rub dove breasts with salt and slice of lemon, melt butter. Brown breasts in skillet and transfer to larger pan if needed or set aside. Melt more butter and gently saute onions and parsley; add flour and stir. Add mushrooms and sherry, salt and pepper to taste. Place birds in the sauce and cover. Cook slowly 45 minutes to 1 hour or longer.
