Blueberry Oat Pancakes

Ingredients

  • 3/4 cup quick cooking oats, divided
  • 3 tablespoons orange juice
  • 1 egg, lightly beaten
  • 2/3 cup fat-free evaporated milk
  • 1/2 teaspoon vanilla
  • 1/4 cup low fat sour cream
  • 2 tablespoons unsweetened applesauce
  • 1/2 cup whole wheat flour
  • 1/4 cup all purpose flour
  • 3 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup fresh or frozen blueberries

Preparation

Step 1

1. In a small bowl, mix ¼ cup oats and orange juice; let
stand for 5 minutes.
2. Stir in egg, milk, sour cream, applesauce and vanilla;
set aside.
3. Place rest of oats in blender and blend till ground.
4. Put in a large bowl; add dry ingredients
6. Pour batter by ¼ cupfuls onto hot griddle coated
with cooking spray; sprinkle with berries.
7. Turn when bubbles form on top; cook till other side is
golden brown.
