Ingredients

  • 1/4 c. flour
  • 1/2 tsp. salt & pepper
  • 4 (3/4") boneless pork chops
  • 1 Tbsp. olive oil
  • 1 Tbsp. unsalted butter
  • 1/2 c. white wine or chicken broth
  • 1/3 c. chopped scallions
  • 1/4 c. heavy cream
  • 1 tsp. lemon juice
  • 1 firm, ripe pear cut into thick slices

Step 1

Combine flour with 1/4 tsp. salt & pepper in shallow plate. Add pork chops, tossing to coat.

Heat oil & butter over medium-high heat. Add pork shops and cook, turning once 8 minutes total or until cooked through. Remove to plate, cove with foil to keep warm.

Same skillet, add wine, scallions, cream, lemon juice, and remaining salt & pepper. Stir to scrape up any browned bits until thickened, 5 minutes.

Stir in pear slices, cook until just heated through, 30 seconds-1 minute. Pour over chops.
