Hot Tomato and Mozzarella Salad

Ingredients

  • 1 pound plum tomatoes, sliced
  • 8 oz. mozzarella cheese, sliced
  • 1 medium red onion, diced
  • 4-6 pieces sun-dried tomatoes in oil, drained and chopped
  • 4 tbsp. olive oil
  • 1 tsp. red wine vinegar
  • 1/2 tsp. Dijon mustard
  • 4 tbsp. mixed chopped fresh herbs such as basil, parsley, oregano and chives
  • salt and black pepper

Preparation

Step 1

1. Arrange the sliced tomatoes and cheese in circles in four shallow flameproof dishes. Scatter over the onion and sun-dried tomatoes. Whisk together the olive oil, vinegar, mustard, chopped herbs and seasonings. Pour over the salads.

2. Place the salads under a hot broiler for 4-5 minutes, until the mozzarella starts to melt. Grind over plenty of black pepper and serve.
