Ingredients

  • 1 shallot, minced
  • 2 T butter or margarine
  • 250 gr (1/2 lb) mixed mushrooms (ex. button, shitake en chanterelles) sliced
  • 100 ml (7/16 cup) cry cider
  • 500 ml (2 cups) vegetable broth
  • 100 g (1/4 lb) smoked chicken, diced
  • 1 T Italian herbs seasoning
  • 1 spring onion, sliced in rings
  • croûtons

Preparation

Step 1

Cook shallots in butter/margarine until soft. Add mushrooms and cook on high heat for 2 minutes. Stir in cider and bouillon, bring to a simmer for 5 minutes. Add chicken and warm through, add seasoning and onion and stir. Label soup into bowls and garnish with croûtons.
