Ingredients
- 1/2 C flour
- 3/4 tsp salt
- 3/4 tsp freshly ground pepper
- 1 tsp dried thyme
- pinch of cayenne pepper
- 1 C milk
- 8 T unsalted butter
- 4 large eggs, at room temperature
- 1/2 C grated Parmesan
- 1/2 C grated Gruyere
- egg wash made from 1 large egg and 1 tsp water.
Preparation
Step 1
Heat oven to 400. Sift together flour, slat, pepper, thyme, and cayenne.
IN a large heavy saucepan over high heat, combine milk and butter, in pieces. Remove form heat the moment it boils; add flour mixture all at once. Stir briskly until mixture pulls away from sides of pan. Return to low heat and beat for half a minute. Remove and let cool slightly.
Beat in eggs one at a time until mixture is smooth and just holds its shape. Add cheeses; tir well.
Pipe form a pastry bag fitted with a large star tip onto a buttered baking sheet. Brush tops of puffs sparingly with egg wash.
Bake for 20 minutes and serve.
