Cosmic Chocolate-Peppermint Patties (Chocolate Covered Katie)

Nutritional info DOES include the agave/maple syrup in the coating. If you use the sugar-free chocolate sauce, the calorie count will actually be lower than what is listed below.
I used candy molds for my patties, and this info is based on 8 patties.

Ingredients
- Filling:
- 2 tsp water (x4=2Tbsp)
- 2 tbsp Coconut Butter (x4=1/2cup)
- 1/8 tsp pure peppermint extract(x4=1/2tsp)**or as desired
- 1 1/2 tsp agave or pure maple syrup (x4=2Tbsp), or stevia drops to taste
- Chocolate:
- 2 tbsp coconut oil (unrefined)(x4=1/2cup**KC:3/4cup)
- 1/4 cup cocoa powder (x4=1cup**KC:1/2 cup)
- 2 tsp water (x4=2 1/2 Tbsp**KC:omit)
- 2 tbsp agave or pure maple syrup (x4=1/2cup**KC:1/4cup) (sugar-free sub: 10-20 drops liquid stevia, omit water)
- peppermint extract if desired (**KC:1/8tsp)
Preparation
Step 1
Combine first 4 ingredients in a little bowl. (Best if the coconut butter is not melted.)
In a separate bowl, combine last 4 ingredients.
In candy molds or cupcake liners, spread out 1/2 of the chocolate, then portion the mint filling on top.
Finally, cover with the rest of the chocolate and freeze until chilled.
Substitution notes: If you don’t have coconut butter, perhaps you can sub more coconut oil. But I haven’t tried this and can’t vouch for the results. Also, I haven’t tried any coconut-free variations of this particular recipe, but maybe try raw cashew butter or pureed cashews in the filling? If you don’t like mint, of course you are free to omit the extract. And you can sub melted chocolate chips for the last four ingredients if you don’t have coconut oil.
