Ingredients
- 1 T. olive oil
- 3/4 C. onion, chopped
- 1/2 C. green pepper, chopped
- 1/2 C. celery, chopped
- 1/2 C. carrot, chopped
- 1 C. tomatoes, diced
- 1 can (15 oz) black beans, drained & juice reserved
- 1/2 tsp. thyme
- 1 tsp. garlic salt
- 3 T. cider vinegar
- 1/2 tsp. hot pepper sauce
- 2 C. cooked rice

Preparation
Step 1
Saute onion, pepper, celery and carrot in olive oil until tender. Stir in tomatoes, beans, thyme and garlic salt; cook 3 minutes. Add vinegar, pepper sauce and reserved juice. Cook 5 minutes. Serve over rice.
