Ingredients
- 2-1/2 c. Flour
- 3/4 c. Sugar
- 2 tsp. Baking Powder
- 1/4 tsp. Baking Soda
- 1/4 tsp. Salt
- Zest of 1 Orange
- 1 large Egg (lightly beaten)
- 3/4 c. Buttermilk
- 2/3 c. Safflower or Canola Oil
- 1 tsp. Vanilla Extract
- 2 c. fresh or frozen Berries (blueberries,
- raspberries, blackberries and/or strawberries)

Step 1
Preheat oven to 375°. Position rack in middle of oven. Spray or butter muffin cups. Set aside.
In a large bowl, whisk together egg, buttermilk, oil and vanilla.
In another large bowl, combine flour, sugar, baking powder, baking soda, salt and orange zest. Gently fold in the berries. With a spatula, fold the wet ingredients into the dry ingredients and stir only until they are combined. Do not over mix the batter.
Fill each muffin cup almost full with batter. Place in oven and bake about 20 minutes. Transfer to a wire rack and let cool for 5 minutes before removing from pan. Dust with powdered sugar.
NOTE: If you are using frozen berries, you may have to bake the muffins a little longer.
