Beef with Zucchini

Ingredients
- 1 lb. flank steak
- 3-4 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon dry sherry
- 1 1/2 teaspoons sugar
- 2 medium zucchini
- 4 tablespoons cooking oil
- 2 slices ginger root

Step 1
Cut beef into 2" strips with the grain, then into 1/4" thick slices against the grain. Mix the soy sauce, cornstarch, sherry and sugar and set aside.
Cut zucchini into 3" chunks.
Heat oil in wok and add ginger root. Stir a few times then add beef mixture, stirring constantly until beef is partially cooked - about 1 1/2 minutes. Add in zucchini and continue stirring for another minute.
Serve hot with boiled rice.
