Szechuan Beef & Vegetables - Spicy

Ingredients

  • 3 cups quick cooking rice
  • 1/2 lb. extra lean ground beef
  • 1 16 oz frozen mixed broccoli, carrots & water chestnuts (or another blend)
  • 1 cup fresh snow peas - trimmed
  • 1/2 cup Szechuan spicy stir-fry sauce or another flavor
  • 2 Tbsp dry-roasted peanuts - chopped

Preparation

Step 1

Cook rice according to directions. Meanwhile, in a large skillet or wok, cook ground beef over medium-high heat 4 minutes or until it is no longer pink; remove from skillet and drain well on paper towels. In same skillet, add frozen vegetables, snow peas and stir fry sauce; mix well. Reduce heat to medium; cover & cook 7-10 minutes or until vegetables are softened, stirring occasionally. Return beef to skillet; mix well. Cook until heated through. Serve over rice. Top with chopped peanuts.
