Raspberry Oatmeal Bars

Stacie won a Blue Ribbon at the Orange County Fair with this yummy Oatmeal Bar. Also good with Boysenberry or Blackberry Jam.

Ingredients
- 1 Pkg Duncan Hines Deluxe Yellow Cake Mix
- (also good with Chocolate Cake mix)
- 2 1/2 cups Quick-cooking Oats
- 3/4 cups (1-1/2 sticks) butter or margarine, melted
- 1 cup (12oz jar) raspberry, blackberry, or boysenberry preserves or jam
- 1 Tablespoon water
Preparation
Step 1
Combine dry cake mix and oats in large bowl; add melted butter and stir until crumbly. Measure half of crumb mixture (about 3 cups) into pan. Press firmly to cover bottom. Combine preserves and water; stir until well blended. Spread over crumb mixture in pan. Sprinkle remaining crumb mixture over preserves; pat firmly to make top even.
Bake for 18-23 minutes or until top is very light brown. Cool in pan on rack; cut into bars. Store in airtight container.
Can be served with whipped topping or Vanilla Ice Cream.
*Good with Blackberry, Boysenberry or Apricot preserves.
