Lemon Cut Out Cookies

  • 1 cup margarine (softened)
  • 1 cup sugar
  • 1 egg yolk (yellow part)
  • 1 tbsp lemon peel
  • 2 tsps lemon juice
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 1/2 cups flour



Step 1

Cream butter and sugar. Beat in egg yolk and lemon peel and juice. Add baking powder and salt. Gradually stir in flour. Cover and refrigerate at least 2 hours. Roll dough 1/8" thick on lightly floured surface. Place on lightly greased cookie sheet. Bake until edges brown. 8-10 minutes at 325.
