Ingredients

  • 1 tbs olive oil
  • 1 lb. lamb stew meat
  • 1 cup chopped onion
  • 1/2 tsp salt
  • 1/4 tsp red pepper
  • 1/4 tsp cumin
  • 5 garlic cloves, minced
  • 1 tbs tomato paste
  • 2 tsps honey
  • 2 1/2 cups chicken broth
  • 1/2 cup golden raisins
  • 15 oz. can chickpeas, rinsed & drained
  • 1/3 cup chopped pistachio
  • 2 tbs. fresh cilantro

Preparation

Step 1

Heat oil in tagine over medium-high heat. Add lamb & saute til brown on all sides about 4 minutes. Remove lamb with slotted spoon. Add onion, S&P, cumin, saute 4 minutes stirring occasionally. Add garlic, saute 1 minute stirring constantly, return lamb to pan, stir in tomato paste, honey cook 30 seconds stirring constantly. Add broth, raisins, chickpeas, bring to a boil. Reduce heat to medium and cook 50 minutes, stirring occasionally. Sprinkles with pistachios & cilantro.
