Fresh Breakfast Sausage

Ingredients

  • 2 lb pork butt, diced into 1/4 inch pieces
  • 1/2 lb fat back diced into 1/4 inch piece
  • 2 teaspoons kosher salt
  • 1 1/2 teaspoons fresh ground pepper
  • 2 teaspoons finely chopped fresh sage
  • 2 teaspoons finely chopped fresh thyme
  • 1/2 teaspoon finely chopped rosemary
  • 1 tablespoon light brown sugar
  • 1/2 teaspoons grated nutmeg
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon red pepper flakes

Preparation

Step 1

combine all ingredients and chill for 1 hour. Grind together and form into patties.
