Ingredients
- 2 lb pork butt, diced into 1/4 inch pieces
- 1/2 lb fat back diced into 1/4 inch piece
- 2 teaspoons kosher salt
- 1 1/2 teaspoons fresh ground pepper
- 2 teaspoons finely chopped fresh sage
- 2 teaspoons finely chopped fresh thyme
- 1/2 teaspoon finely chopped rosemary
- 1 tablespoon light brown sugar
- 1/2 teaspoons grated nutmeg
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon red pepper flakes

Step 1
combine all ingredients and chill for 1 hour. Grind together and form into patties.
