Ingredients
- Frosting:
- 1 pouch of Betty Crocker Double Chocolate Chunk Cookie Mix
- 1/4 c. oil
- 2 tablespoons water
- 1 egg
- 2/3 c. chopped pecans
- 12 large marshmallows, slice length wise in half
- 1 cup semi sweet chocolate chips
- 1/3 c. whipping cream
- 1 teaspoon butter or margarine
- 1 teaspoon vanilla
- 1/2 c. powdered sugar
Preparation
Step 1
Mix together cookie mix, oil, water, egg and pecans together in a bowl. Use a melon baller and drop cookies in balls onto a greased cookie sheet.
Bake at 350 degrees for 7 minutes. Remove from oven and place 1 marshmallow halve (cut-side down) on top of each cookie. Place back into the oven for another 2 minutes to soften the marshmallow. Cool on wire racks.
For the frosting melt the semi chocolate chips on low heat until smooth. Remove from heat and add whipping cream, butter and vanilla. Blend well. Stir in powdered sugar until smooth.
Spread frosting over cooled cookies to cover marshmallow. Let set on wire rack for about 10 minutes. Frosting should harden to set.
