Ingredients

  • 2 cups persimmon pulp
  • 1 cup milk
  • 3 eggs
  • 4 tbsp melted butter
  • 2 tsp vanilla
  • 1 1/2 cups whole wheat flour
  • 4 tsp baking soda
  • 2 tsp cinnamon
  • 1 1/2 cups sugar
  • 1 tsp salt
  • 1 tsp cloves or pumpkin pie spice
  • 1 cup walnuts
  • 1 cup golden raisins

Preparation

Step 1

Mix pulp, milk eggs, butter and vanilla together. Sift together dry ingredients and add to pulp mixture. Add raisins and walnuts. Pour into greased loaf pans and bake at 325-350 for 1 hour.

Makes 3 loafs of pudding.
